I have difficulty feeding either quinoa or carrots to my family. I love both and find them perfect mediums (media) for both savory or sweet dishes. Today I found a recipe that I am certain my crew will love after they’ve tasted it, if I don’t reveal the contents (except for the olive oil).
When I make quinoa, I like to presoak it and allow it to sprout. Sprouting enhances the vitamins. Unfortunately Mr. Olive Crazy witnessed the sprouted quinoa and made some gross comment about what it resembled. I must admit his vision of the sprouted quinoa effected me, but I powered through it.
I still plan on sprouting the quinoa before I make the kugel. I just hope no one notices, otherwise there will be lots of quinoa and carrot kugel for Olive Crazy to enjoy.
